Dia de Ñoquis.

It is an old tradition in Urugauy to eat ñoquis on the 29th of every month. Since today is the 29th my mother in law and I made some. Warning: Time consuming.

 On average you will need two regular potatos per person. Boil with skin on so the potatos dont get too mushy. Boil till tender.
 Remove skins with a fork.
 Put potatos through a potato ricer. If you dont have one of the gadgets you can just mush them with a fork. NO LUMPS!
 This is 5 very large potatos.
 Add about a cup of shredded cheese. We used mexican blend.
 Add 1 egg and 1 egg yolk.
 Add flour. Not sure how much because she just messes around with it till it feels right. You need to add enough that the dough does not stick to your hand.
 Roll out on a floured surface into "Snakes."
 Cut into little chuncks.
 While she was rolling them out I made the sauce. I did hamburger, onions, garlic and prego. Nothin fancy.
 Now is the fun part. You have to roll every damn little dumpling over the back of a fork  so they have ridges.
 Close up.
 Boil water in the biggest pot you have. Dump in about 20 at a time. When they raise to the top wait about twenty seconds and remove with a slotted spoon into you serving dish.

Then pour on your meat sauce and enjoy!!!
